Sweet Potato Apple Pie

Holiday classic. Apples and sweet potatoes combined with eggs, light cream, brown sugar, cinnamon, salt and nutmeg.
Ingredients -
2 Medium Apples, peeled, cored and thinly sliced (2 cups)
1 Unbaked Pie Crust
3 Medium Sweet Potatoes, cooked peeled and mashed
2 Eggs, lightly beaten
1 1/4 cups Light Cream
2/3 cup Brown Sugar
1 teaspoon Cinnamon
1/4 teaspoon Salt
1/4 teaspoon Nutmeg
 
Preparation:

1. Preheat oven to 375 F.

2. Arrange apples in bottom of unbaked pie crust.

3. Combine sweet potatoes, beaten eggs, light cream, brown sugar, cinnamon, salt and nutmeg in medium mixing bowl.

Beat mixture with hand mixture until smooth.

5. Pour sweet potato mixture over apples.

6. Cover pie crust edge with foil.

7. Bake 25 minutes. (knife inserted in center should come out clean).

8. Remove foil from pie crust edges.

9. Serve warm.

Sweet potatoes require a minimum of preparation. Scrub well under cold water, immediately before cooking with skins on or if you plan to peel them.
