Apple Pie Filling

Quick apple pie filling recipe can be made and frozen for use months later. Recipe makes enough for 5-6 large apple pies. Filling combines apples, fresh lemon juice, sugar, ground cinnamon and nutmeg.
Ingredients -
18 cups thinly Sliced Apples
3 tablespoons Fresh Lemon Juice
4 1/2 cups White Sugar
1 cup Cornstarch
2 teaspoons Ground Cinnamon
1 teaspoon Salt
1/4 teaspoon Ground Nutmeg
10 cups Water
 
Preparation:

1. Add apple slices to large mixing bowl. Sprinkle with lemon juice. Toss to coat.

2. Add water to Dutch oven. Heat over medium heat.

3. In a small bowl combine sugar, cornstarch, cinnamon, salt and nutmeg.

4. Add sugar mixture to water, stir to mix well. Bring mixture to boil.

5. Boil 2 minutes, stirring constantly.

6. Add apples to Dutch oven. Return to boil.

7. Reduce heat, cover Dutch oven and simmer 6 to 8 minutes until apples are tender.

8. Cool 30 minutes. Spoon mixture into 6 freezer containers, but do not fill. Leave air space.

9. Seal containers and freeze up to 12 months.

Apples
A Granny Smith or other tart apple is a good choice for this apple pie filling. The recipe calls for 4-1/2 cups sugar and the sweetness of the sugar balances well with a tart baking apple.
