Apple And Pear Pie

Apple and pair combination in this apple pie featuring homemade piecrust. Pie filling combines sliced pears and apples with sugar, nutmeg, cinnamon, rum extract, ground cloves, and raisins. Top crust is finished with a brush of butter and baked golden brown.
Ingredients -
1 1/2 cups All Purpose Flour
3 tablespoons Sugar
1/4 teaspoon plus 1/8 teaspoon Baking Powder
1/4 teaspoon plus 1/8 teaspoon Salt
6 tablespoons cold Butter
1/4 cup Milk
1 1/2 teaspoons Cider Vinegar
5 cups peeled sliced Tart Apples
2 cups sliced peeled Ripe Pears
1/3 cup Raisins
1/2 cup plus 1 teaspoon Sugar, divided
1/4 cup All-Purpose Flour
1/4 teaspoon Nutmeg
1 teaspoon Cinnamon
1/4 teaspoon Ground Cloves
3/4 teaspoon Rum Extract
1 Egg White
 
Preparation:

1. In a large mixing bowl combine flour, sugar, baking powder and salt. With fork, cut in butter.

2. Mixture should resemble coarse crumbs.

3. In small bowl combine milk and vinegar. Gradually add to crumb mixture until dough ball forms.

4. Divide dough into two balls, one larger than the other. Lightly flour a flat surface. Roll large dough ball to fit 9-inch pie plate. Transfer pastry shell to pie plate.

5. Combine apples, pears and raisins in large mixing bowl.

6. In small mixing bowl, combine 1/2-cup sugar, flour, nutmeg, cinnamon, and cloves.

7. Add sugar mixture to fruit and toss to coat.

8. Sprinkle mixture with rum extract and toss to coat.

9. Spoon apple pie mixture into piecrust.

10. Roll small dough ball flat to make lattice crust. Trim crust. Seal and flute crust edges.

11. Brush crust with egg white and sprinkle with teaspoon sugar.

12. Preheat oven to 425 F. Bake 15 minutes. Reduce oven temperature to 350 F. Bake additional 30 minutes or until crust is golden brown and filling is bubbly.

13. Cool partially before serving.

 



Cooking Tip
Rum Extract
You can substitute 2-3 tablespoons of light rum, or 1-1/2 tablespoons of dark rum for the rum extract. When purchasing rum extract, look for natural or pure on the label, indicating a quality rich flavored extract.

Rolling Piecrust
Tear off 12-inch piece of wax paper. Roll out dough so it touches al four sides. Now cut 12-inch circle from dough to fill fill standard 9-inch pie pan.
